Confession: I adore a cup of creamy coffee in the morning.
Everything about it, from the ritual to the smell, to the taste, screams comfort to me. 

The problem is that even though I love the creaminess, the creaminess doesn't love me back. 
My reaction to dairy cream is subtle, yet consistent..  and it inflames me almost instantly. 

I've welcomed cashew cream into my world as a dairy-free alternative instead. 
I can now have my creamy morning coffee without stressing out my immune system every day. In fact, cashews themselves are a  rich source of nutrition including heart healthy fats,  energizing B vitamins, and skin and immune supportive minerals such a zinc, selenium and magnesium. 

The three recipes I'm sharing with you today get more delicious as you make your way down the list..

Standard Cashew Coffee Cream Recipe

  • 1 cup cashews (soaked for a few hours, water discarded)

  • 3 cups of filtered water

  • a pinch of sea salt

Blend the above ingredients together until smooth. No need to strain!

TIP: Add a dash of vanilla extract too make it vanilla flavoured!  
You can adjust the consistency of your cream by adding more water (will thin it out) or adding less water (or more cashews), which will thicken it up or make it more creamy.


Salted Caramel Coffee Cream Recipe

This is such a delicious, creamy and slightly sweet dairy-free cream to enjoy with your coffee.
It’s so easy to make, is totally yummy and will spare you the artificial sweet mess that is being pumped into your coffee at mainstream coffee shops.

This recipe is sweetened with dates, and though dates are quite a sweet fruit, they do contain a good amount of fiber, B vitamins and are rich in minerals. Think of them as nature’s caramel. :)

It’s ideal to pair something sweet (like dates) with some fat, to help avoid any drastic spikes in blood sugar levels. The cashews in this recipe will take the wheel on that (fat) part.

Recipe

  • ½ cup cashews (soaked for a few hours, removed from soaking water)

  • 2 cups of water

  • 3-5 dates (pitted)

  • ½ tsp of sea salt

  • Optional: 1 heaping tbsp of collagen protein powder

Blend everything together in a high powered blender until nice and creamy. 

TIP: No cashews on hand? No problem, add a can of full fat coconut milk as your base and just add the dates and sea salt to that.
This will only last in the fridge for a few days.


Iced Salted Caramel Latte Recipe

  • 1 cup of chilled organic coffee

  • 1/3 cup of salted caramel coffee creamer

  • Optional: 1 tsp maca powder

Blend or mix the above ingredients together, pour over ice. 

TIP: Can be enjoyed warm as well, just nix the ice and heat everything together in a pot on the stove top.
