Strawberry Coconut Chia Pudding Bowl

Ontario strawberries are doing their sweet thing and I'm doing my happy dance!

If you need a fresh breakfast idea that isn't a smoothie, then this superfood slam strawberry coconut chia bowl is something you need to try! 

Chia seeds are an amazing source of soluble fiber which means they can help lower cholesterol levels, keep you fuller for longer while promoting digestive regularity ;)

They are a great source of healthy omega 3's. They nourish your hair, skin and joints,  and feed your brain. Eating chia seeds will help balance blood sugar levels to ward off those fierce afternoon cravings.

I like sprinkling chia on things like yogurt, toast, or salads to boost the nutritional content. I commonly add them to my smoothies too, but chia pudding has become a new household favourite. 

Strawberry Coconut Chia Pudding Bowl

Combine the following ingredients in a food processor or blender: 

  • 1 cup fresh or frozen strawberries
  • 1/2- 1 whole banana
  • 1/2 cup of coconut milk
  • 1/2 tsp of vanilla
  • 1/2 cup of chia seeds

This can be made the night before, just blend and store in the fridge overnight.

Before serving, top with things like shredded coconut, cacao nibs, sliced berries, granola, chopped nuts or seeds and even a drizzle of honey for added sweetness. 

This "breakfast" also subs in nicely as a dessert. :)
